Chocolate!

Posted on July 18, 2016 at 13:46 0 Comments

One of the things it's best to avoid when you have kidney disease is chocolate due to the high potassium level. But I found a way tha I can have chocolate 3 times a day.

I've had a bit of a rough year. I had to have a hysterectomy due to endometrial cancer followed by chemotherapy. The chemo was apparently adjusted because of my kidneys but it still reeked havoc with my blood. I wound up in hospital twice, a week each time, because of urinary tract infections. The last one I was told… Continue

Quesadillas - I LOVE Quesadillas

Posted on July 12, 2015 at 15:47 0 Comments

If anyone else loves these things as much as I do I found THE perfect recipe on the DaVita site. It's for dialysis, non-dialysis and diabetic patients!

This recipe is for Shrimp Quesadillas but since I was brought up in Ontario I was a meat and potatoes girl. I like the fresh fish on the West Coast but haven't been able to force myself to eat shrimp or prawns since my father-in-law brought me some fresh off the boat prawns many years ago. I'd never seen non grocery/restaurant ones.…

First of all one of my all time favourite recipes and one my husband loved too is Honey-Ginger Crackles from the Spice It Up website. The recipe is here…

Summer Salads

Posted on June 22, 2015 at 14:30 0 Comments

These are two dishes that have been in my family for decades. One is a cold Tuna Macaroni salad and the other is a Coleslaw

My mother used to make this tuna salad, I don't know where she got the recipe from... probably a box label. When I served this to dinner guests about 40 years ago they were skeptical about a cold macaroni salad but these days they seem very popular. This has always been a family favourite. I tried to measure last time so I'd have basic amounts of ingredients. You…
