Chocolate!

One of the things it's best to avoid when you have kidney disease is chocolate due to the high potassium level. But I found a way tha I can have chocolate 3 times a day.



I've had a bit of a rough year. I had to have a hysterectomy due to endometrial cancer followed by chemotherapy. The chemo was apparently adjusted because of my kidneys but it still reeked havoc with my blood. I wound up in hospital twice, a week each time, because of urinary tract infections. Quesadillas - I LOVE Quesadillas

If anyone else loves these things as much as I do I found THE perfect recipe on the DaVita site. It's for dialysis, non-dialysis and diabetic patients! 

This recipe is for Shrimp Quesadillas but since I was brought up in Ontario I was a meat and potatoes girl. I like the fresh fish on the West Coast but haven't been able to force myself to eat shrimp or prawns since my father-in-law brought me some fresh off the boat prawns many years ago. Honey Ginger Cookies and Lemon Tea Bread

It's been so hot here but I've been craving a snack in the evenings so I decided to bake anyway. A fan in the kitchen is a good idea. Sun's not out today cause there are forest fires in Sechelt and Vancouver area is covered in what looks like a low cloud but is actually smoke. At least we don't have the smoke smell today.

Summer Salads

These are two dishes that have been in my family for decades. One is a cold Tuna Macaroni salad and the other is a Coleslaw
